Avocado and Pesto Salad
Salads can easily become a fantastic raw food meal for those of us who are committed to getting the most and best nutrition ever on the raw food diet. Living foods such as green leaf lettuce, tomatoes, cucumbers, and avocado are daily part of the raw food diet and living food diet.
The Salad
Lettuce
Tomato
Cucumber
Olive Oil
Sliced Mushroom
Red Onion
Red bell pepper
Green Onion
1 Chopped Avocado
Finely chopped carrots (no more than ½ cup)
¼ cup of basil Pesto dressing
Toss salad ingredients in a bowl. Pour basil pesto over salad. And serve.
Basil pesto dressing*
1 cup tightly packed basil leaves
1 cup of pine nuts
½ cup of olive oil
¼ cup of juice from a lime
1 clove garlic
A little zest from the lime
Process all ingredients to your preferred consistency!
If you prefer your basil pesto chunkier, add ¼ cup of walnuts*
